I made a Lemon (been loving lemon recently) Thyme Quickbread, (recipe courtesy of this blog if you do make it, I would suggest leaving out the lemon extract-which makes it taste unnatural, and upping the fresh-squeezed lemon juice). At any rate, it was extremely moist and delicious. Here it is still in the pan:
