These are from forever ago, both recipes are from Vegan Italiano Stuffed Zucchini and Risotto with Peas. All I remember is that I was going to substitute some matzo meal for bread crumbs but that I accidentally (the containers are quite similar) poured in some brewers yeast instead, so the zucchini tasted just a bit funny from that. Overall I do recommend this cookbook, it has the best and fastest recipe for Red Wine Marinara, that I love.
