Burritos! I bought whole wheat tortillas, used Vegan Gourmet Monterey Jack cheese, brown rice, made the guacamole (just used avacados and fresh lime juice), and of course, The Beans! I just chopped up an onion, added a can of black beans and some tomato juice, with some hot peppers and let it simmer for awhile:
And last night, at the request of Mike to eat some real food, I made red lentils, which I just sauteed onion, garlic, fresh ginger, a crapload of spices (some of which included: fenugreek [so stinky!] cumin, cinnamon, cardomon pods, cloves, etcetera), this was paired with brown rice and steamed broccoli:
